Coconut Yogurt Tostadas by Angela Palmieri Zerillo and Debora Palmieri

We’re a sister duo, Angela Palmieri Zerillo and Debora Palmieri, that combines our love of plant-based food and holistic living by creating healthy, delicious and easy-to-prepare meals. We’re two moms are on a mission to get you to rethink and reinvent your kitchen.
We are super excited about partnering with Yoso! Yoso’s Cultured Coconut yogurt has been a staple of
ours since we both became Plant-based 3 years ago. We love the clean, cruelty-free ingredients and we
love that Yoso supports our health, our community, and our planet through the production of their
products. We are thrilled to be a part of this journey!
We love this fun way to enjoy yogurt and fresh fruit! You’ll definitely want to give these Coconut Yogurt Tostadas a try at your next breakfast or brunch!

Coconut Yogurt Tostadas
Prep time: 20 minutes

You’ll need:
1 pack of corn tortillas
1 container of  Yoso Vanilla Coconut yogurt
Ceylon cinnamon
Coconut oil
Fresh mint
Toasted coconut flakes
Fruit of your choice – we used persimmon, banana, and pomegranate

Steps:
First, brush/spray each tortilla with coconut oil and sprinkle with cinnamon. Place tortillas in a
preheated oven at 350F for about 10-15 minutes until crunchy. Remove from oven and let cool
slightly. Then top with toppings as desired. Serve immediately. You can also drizzle with pure maple
syrup if you wish.
