I love being part of Yoso’s community because it has helped me connect with so many like-minded, health nut individuals! For so long I was unable to enjoy foods that contain dairy, and I always felt I was missing out! Now that there are so many more dairy free alternatives, I’m SO happy to have found Yoso! Freezing the chocolate coconut yogurt brings me back to my childhood when I used to freeze the little chocolate milk cartons in school! Yoso gives me the freedom to eat the foods I love, while fuelling my body!
I love this recipe because I’M OBSESSED with donuts but not so fond of what they do to my waistline. This recipe cuts down on tons of the fat and sugar content you’d find in a store bought donut, and tastes amazing!
Vegan Unicorn Ice Donuts
Prep time: 20 minutes
INGREDIENTS FOR DONUTS:
2/3 cups gluten free flour
1/2 cup coconut sugar
1 tsp baking powder
1 tbsp organic ground flaxseed
1/4 cup melted coconut oil
1 cup almond milk
1 tsp vanilla extract
INGREDIENTS FOR ICING:
Yoso Unsweetened Coconut yogurt
Vegan butter
Icing sugar
Unicorn Superfood Beetroot Powder for the pink colouring, E3live Blue Majik for the blue colouring.
Preheat the oven to 350 F. Grease 2 donut tins (each with 6 cavities). Combine all the dry ingredients (flour, sugar, baking powder, and flaxseed) in a large mixing bowl. Heat the almond milk in a saucepan or microwave until its warm but not boiling. Mix in the melted coconut oil with warm milk (it is important the milk is not cold or it will ruin the recipe). Add the vanilla extract, then fold into the dry ingredients. Whisk until there are no longer any lumps. Spoon the batter into donut tins. Bake for 15-18 minutes. The tops should be firm but not browned. Let cool before icing!
