Oreo Truffles from Thea Justein

Hi! My name is Thea Justein and I post all my vegan recipes on the Instagram account @plated.plants. During the week, I work 9-5 in children’s television as an Acquisition Supervisor. I love my day job in TV, but my other passion is plant-based cooking and baking! I went vegan in December 2015, and have been enjoying all sorts of new products, including Yoso, since then. It’s been so much fun to come up with ways to create vegan versions of everyone’s favourite foods. During my free time, I love taking pictures and blogging about the food I make so that others can make it too! I also started a non-profit organization called Lending A Paw which helps stock food banks and shelters in the GTA with pet food and necessities!

I have been a part of the Yoso community for about a year now and love it! Yogurt was something I grew up eating, and giving it up once I went vegan was a very difficult part of my transition. For years and years, I woke up everyday and ate an apple and a bowl of vanilla yogurt with granola; this was such a morning ritual for me. After trying Yoso as a replacement for dairy yogurt, I fell in love! It is so creamy and delicious, without any added refined sugars or animal bi-products. It has allowed me to eat something I love while remaining true to my love for animals and a vegan lifestyle.

 

OREO TRUFFLES

Instructions:

1/ Open a bag of mini oreos, get all of the air out and seal it with a little bit of the seal remaining open. Smash the bag with a wooden spoon till the bags full of crumbs.

2/ Mix equal parts Oreo crumbs with Yoso plain cream cheese until all mixed together (better to use your hands).

3/ Roll the mixture into little balls and place them on a lined baking sheet. Put in the freezer for 30 mins.

4/ Once frozen, melt chocolate chips with a tsp of coconut oil (either in the microwave or on the stove) and rolls the oreo cream cheese balls in the chocolate to coat.

5/ Once coated in chocolate, drizzle some more crumbs on the balls.

6/ Put coated balls back in the freezer for an hour.
