Cassava, also known as yuca, is a major food staple in the developing world enjoyed by over half a billion people. This starchy tuberous root (almost entirely carbohydrates) is one of the most drought-resistant crops produced primarily in Nigeria and Thailand. Dried powdered cassava is called tapioca, which many of us are familiar with. Cassava is a low glycemic food that is naturally gluten-free, grain-free, and nut-free.
How to Enjoy:
Similar to how you would enjoy a potato: baked, mashed, fried (as chips)
Cooked in desserts
Bake using cassava flour
NOT raw. Raw cassava contains chemicals called cyanogenic glucoside which are toxic, but cooking cassava makes it safe to enjoy.
